Mango pudding


Mr Hoby don't really like sweetie desserts. He bdoesn't really enjoy the dessert that I have made so far and when everyone says Yum, he says Yucks.

However, he has a thing for my mango pudding. He goes goo goo gaga over it and always finishes them! And, this is the trick to your man's heart. I follow this recipe faithfully and I hope you will love it as well!

Your mango pudding should be more yellowish! Because there is no mango icecream here, I substitute it with mango yoghurt icecream instead. It turns out just as nice but more whitish in colour!






Ingredients

6 tsp powdered gelatine

¾ cup caster sugar

1 litre soft mango ice cream
75ml evaporated milk
1 cup crushed ice
1 large mango, peeled seeded and diced

Preparation

Stir gelatine and sugar into 1 cup of boiling water until thick and syrupy. Slowly pour into a glass bowl. Stir in ice cream, evaporated milk, crushed ice and diced mango.

Ladle into bowls or glasses and chill for about 2 hours until set.
